Prosciutto Arugula Flatbread
My friend Kim came over tonight to educate me on the art of blogging. Soooo....this is my first blog. After many hours of admiring all the other wonderful blogs out there, I am finally doing it too!
I made a flatbread to share with Kim tonight while she tutored me on the fine art of starting my own blog. You should check Kim's blog (diaryofanoverachievingmom.blogspot.com), she is exactly as her blog name states.
This is such a simple and delicious flatbread that can be made at the spur of the moment. Rather than using a regular pizza dough, I use a Lavash Bread (very much like a tortilla)
which I purchased at Whole Foods in the bread isle.
Simply brush the lavash with olive oil and top with grated monterey jack cheese. Bake in a preheated 375ยบ oven until the cheese is bubbly and the crust is crisp (about 5 minutes).
Remove from the oven and top with very thinly sliced prosciutto and arugula. Drizzle with a really great fruity olive oil and sprinkle with sea salt and freshly ground pepper. Slice and serve!
